  1. Prepare the Batter

    In a mixing bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking powder and 1/2 teaspoon of salt. In a separate bowl, whisk 1 cup of milk, 1 large egg and 2 tablespoons of melted unsalted butter. Gradually add the wet ingredients to the dry ingredients, mixing until smooth and lump-free. (Similar to Savory Pancake I)

    Tip: Let the batter rest for 5 minutes to ensure even hydration and fluffier pancakes.
  1. Add Spinach and Feta

    Gently fold 1 cup of chopped spinach and 1/4 cup of crumbled feta cheese into the batter. Mix to distribute evenly.

    Tip: For a stronger flavor, use freshly crumbled feta and lightly sauté the spinach before adding it to the batter.
  1. Heat the Pan

    Place a non-stick frying pan over medium heat and lightly grease it with a small amount of butter or oil. Allow the pan to heat thoroughly for 1-2 minutes.

    Tip: A well-heated pan ensures evenly browned pancakes without sticking.
  1. Cook the Pancakes

    Scoop about 1/4 cup of batter onto the pan for each pancake. Spread it slightly with the back of the spoon to form an even circle. Cook for 2-3 minutes or until bubbles form on the surface and the edges begin to set. Flip the pancake and cook for 2-3 minutes until golden brown.
