Description
One-Pan Sausage and Vegetable Bake combines sausages, zucchini, peppers and tomatoes, all roasted with olive oil and herbs for effortless Mediterranean flavor.

Preheat and Prepare Ingredients
Preheat the oven to 400°F (200°C).
Slice 2 sausages, 1 bell pepper and 1 zucchini. Halve 1 cup of cherry tomatoes.

Assemble on Baking Sheet
Arrange the sausage slices, bell pepper, zucchini and cherry tomatoes on a baking sheet.
Drizzle 1 tablespoon of olive oil over everything and season with 1 tsp of seasoning, salt and pepper.

Bake
Toss the ingredients on the sheet to coat evenly with oil and seasonings.
Bake for 20–25 minutes until the vegetables are tender and the sausages are cooked.
Tip: Serve with a side of crusty bread to soak up the juices from the bake.
