Description

Tandoori chicken thighs are marinated in a yogurt and spice blend, then grilled or roasted for a tender, flavorful dish with a hint of smoky char.

Ingredients

Instructions

  1. Prepare the Marinade

Combine 1 cup of plain yogurt, 2 tablespoons of tandoori spice blend, 2 tablespoons of lemon juice, 2 minced garlic cloves, 1 teaspoon of grated ginger and a pinch of salt and pepper. Mix until smooth and well combined.

Tip: Ensure the yogurt is full-fat for a rich and creamy marinade.
  1. Marinate the Chicken

Place the chicken thighs in the marinade, coating them thoroughly on all sides. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 4 hours for deeper flavor.

Tip: For even marination, turn the chicken halfway through the resting time.
  1. Preheat the Oven or Grill

If using an oven, preheat it to 200°C (400°F). For a grill, preheat to medium-high heat and oil the grates lightly to prevent sticking.

Tip: Let the oven or grill heat up fully for even cooking and a crisp exterior.
  1. Arrange the Chicken for Cooking

For the oven, place the marinated chicken thighs on a lined baking sheet, skin side up. If grilling, place the thighs skin-side down on the grates.

Tip: Shake off excess marinade to prevent burning during cooking.
  1. Cook the Chicken

Bake the chicken in the oven for 35-40 minutes or grill for 15-20 minutes per side. Cook until the internal temperature reaches 75°C (165°F) and the skin is golden brown.

Tip: Use a meat thermometer for precise doneness.
  1. Garnish and Serve

Once cooked, transfer the chicken to a serving platter. Garnish with chopped fresh cilantro and serve with lemon wedges for a zesty touch.

Tip: Let the chicken rest for 5 minutes before serving to lock in juices.
