Tandoori cauliflower steak is a flavorful dish featuring thick cauliflower slices marinated in tandoori spices and yogurt, then roasted to perfection.

  1. Prepare the Cauliflower

    Slice the cauliflower into thick 1.5 cm steaks, starting from the center of the head. Remove any excess leaves but keep the stems intact to hold the steaks together.

    Tip: Use a sharp knife to ensure clean, even slices that won’t fall apart.
  1. Make the Marinade

    Combine the yogurt, tandoori spice blend, lemon juice, minced garlic, grated ginger, salt and pepper. Stir until smooth and evenly blended.

    Tip: Adjust the spice level by adding more or less tandoori spice blend based on your preference.
  1. Marinate the Cauliflower
     

    Brush the marinade generously over both sides of each cauliflower steak, ensuring it is well-coated. Let it sit for 10-15 minutes to absorb the flavors.

    Tip: Marinating longer, if time allows, will deepen the flavor - up to 30 minutes is ideal.
  1. Preheat the Oven

    Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper or a silicone (baking) mat.

    Tip: Use parchment paper to make cleanup easier and prevent sticking.
  1. Roast the Cauliflower

    Place the marinated cauliflower steaks on the prepared baking sheet. Roast in the oven for 25-30 minutes, flipping halfway through, until golden brown and slightly crispy around the edges.

    Tip: Use a spatula to carefully flip the steaks to avoid breaking them.
  1. Garnish and Serve

    Remove the cauliflower steaks from the oven and transfer them to a serving plate. Garnish with fresh cilantro and serve with lemon wedges on the side.
