  1. PREPARE THE MARINADE

    Combine the olive oil, lemon juice, minced garlic, dried oregano and salt in a mixing bowl. Whisk the mixture thoroughly until it forms a smooth, fragrant marinade. Ensure the garlic is evenly distributed for maximum flavor.

    Tip: Use freshly squeezed lemon juice for a brighter, more authentic taste and adjust the salt according to your preference.
  1. MARINATE THE MEAT

    Place the pork or chicken cubes in the bowl with the marinade. Toss the meat thoroughly to ensure every piece is evenly coated. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes or up to 4 hours for a more intense flavor.

    Tip: Avoid marinating for longer than 4 hours, as the acid from the lemon juice may start to break down the texture of the meat.
  1. ASSEMBLE THE SKEWERS

    Remove the marinated meat from the fridge. Thread the meat cubes onto skewers, leaving a small space between each piece to ensure even cooking. If using wooden skewers, soak them in water for 20-30 minutes beforehand to prevent burning during grilling.

  1. GRILL THE SKEWERS

  1. SERVE THE SOUVLAKI

    Transfer the grilled skewers to a serving platter and rest for a few minutes. Serve hot with pita bread, tzatziki sauce or a fresh salad for a complete meal. Optionally, garnish with lemon wedges for extra zest.
