Use a paring knife to trim the stem, leaving about 2-3 cm and peel the fibrous outer layer of the stem. Cut the artichokes in half lengthwise and use a spoon to remove the fuzzy choke from the center. Place the trimmed artichokes in a bowl of cold water with a splash of lemon juice to prevent browning.

    Tip: Work quickly after cutting the artichokes, as they oxidize and brown quickly. Lemon water helps retain their color.
  1. Sauté the Garlic

    Heat 2 tablespoons of olive oil in a large skillet or heavy-bottomed pan over medium heat. Add the minced garlic and sauté for 1-2 minutes, stirring constantly, until fragrant but not browned.
