  1. PREPARE THE MARINADE

    In a medium bowl, mix the honey, lime zest, lime juice, olive oil, minced garlic, salt and pepper. Whisk the mixture until it is smooth and well blended. Taste the marinade and adjust the balance of sweetness and tanginess by adding a little more honey or lime juice as needed. Set the marinade aside for later use.

    Tip: For a more vibrant lime flavor, add extra lime zest, but avoid too much juice as it can overpower the sweetness.
  1. PREPARE THE SHRIMP

    Rinse the shrimp under cold running water and pat them dry with paper towels. Check for any remaining veins or shells and remove them if necessary. Place the shrimp in a large bowl and pour half of the prepared marinade over them. Toss the shrimp gently to ensure they are evenly coated. Cover the bowl and let the shrimp marinate in the refrigerator for, at least, 10-15 minutes. Reserve the remaining marinade for brushing during grilling.

    Tip: Do not marinate the shrimp for too long, as the acid from the lime juice can start to "cook" the shrimp and change their texture.
  1. PREPARE THE SKEWERS

    While the shrimp are marinating, soak the wooden skewers in water for, at least, 10 minutes to prevent them from burning on the grill. Once soaked, thread 4-5 shrimp onto each skewer, ensuring they are spaced evenly to allow for even cooking.

    Tip: Use two skewers per set of shrimp to make flipping them on the grill easier and prevent spinning.
  1. PREHEAT AND PREP THE GRILL

    Preheat your grill to medium-high heat, about 200°C. Clean the grill grates thoroughly and oil them lightly with a paper towel dipped in vegetable oil to prevent sticking.

    Tip: Ensure the grill is hot before placing the skewers to achieve good sear marks and prevent the shrimp from sticking.
  1. GRILL THE SHRIMP SKEWERS

    Place the shrimp skewers on the preheated grill. Cook for 2-3 minutes on one side until the shrimp turn pink and opaque. Flip the skewers and cook for 2-3 minutes (on the other side). During the last minute of cooking, brush the reserved marinade over the shrimp for added flavor and a glossy finish.

    Tip: Avoid overcooking the shrimp, as they can become rubbery! They are done when they curl into a "C" shape and have a firm texture.
  1. SERVE AND GARNISH

    Remove the shrimp skewers from the grill and transfer them to a serving platter. Drizzle with any remaining marinade if desired. Garnish with fresh lime wedges and sprinkle chopped herbs like parsley or cilantro over the top for added freshness. Serve immediately.

    Tip: Pair with light sides like a crisp salad, grilled vegetables or steamed rice for a complete and balanced meal.
