Ingredients
  • 4 pieces Salmon fillets (170 g each)
  • 1 bunch Asparagus spears (trimmed)
  • 1 Lemon slices (1 lemon, thinly sliced)
  • 4 cloves Garlic (minced)
  • 4 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • Dill (optional, for garnish)
Instructions
  1. PREPARE THE SALMON

    Rinse the salmon fillets under cold running water and pat them completely dry with paper towels. Check for any pin bones by running your fingers along the flesh and remove them with tweezers if necessary. Place the salmon fillets on a clean plate and drizzle 2 tablespoons of olive oil over them. Sprinkle evenly with half the salt and pepper. Rub the seasoning gently into the fish to coat it well.

    Tip: Drying the salmon thoroughly ensures a better texture after cooking and helps the seasoning adhere more evenly.
  2. PREPARE THE ASPARAGUS

    Rinse the asparagus spears thoroughly under cool water and pat them dry with a clean kitchen towel. Trim the woody ends by snapping them off where they naturally break. Place the asparagus in a bowl, drizzle with the remaining olive oil and sprinkle with the rest of the salt and pepper. Toss gently to coat the spears evenly.

    Tip: Removing the tough ends ensures the asparagus cooks evenly and remains tender.
  3. ASSEMBLE THE FOIL PACKETS

    Lay out four large sheets of aluminum foil on a flat surface. Place an equal portion of asparagus spears in the center of each sheet. Top the asparagus with a salmon fillet. Distribute the minced garlic evenly over each fillet. Add 2-3 slices of lemon on top of the salmon for each packet. If desired, sprinkle a small pinch of dill over the top for added flavor. Fold the foil over the ingredients, bringing the edges together and seal tightly to form a packet. Make sure there are no gaps where steam can escape.

    Tip: Ensure the foil packets are sealed completely to trap steam and flavor during cooking.
  4. COOK THE FOIL PACKETS

    Preheat the oven to 200°C or heat a grill to medium-high heat. Place the foil packets on a baking sheet (for the oven) or directly on the grill. Cook for 18-20 minutes. If using the oven, place the baking sheet on the middle rack. Check one packet for doneness by carefully opening it and ensuring the salmon flakes easily with a fork and the asparagus is tender. Once cooked, remove the packets from the heat.

    Tip: Be cautious when opening the foil packets as the steam inside will be very hot.
  5. SERVE

    Carefully transfer the foil packets to individual plates. Allow guests to open their packets for a more interactive dining experience. Serve with additional lemon wedges for squeezing over the dish. Garnish with extra dill, if desired, for a fresh finish.
