    Combine the all-purpose flour, baking powder and salt. Whisk to blend evenly. In another bowl, whisk the milk, egg and melted butter. Gradually pour the wet ingredients into the dry mixture, stirring until a smooth batter forms.

    Tip: Avoid overmixing the batter to keep the pancakes light and fluffy.
  1. Incorporate the Corn and Jalapeno

    Gently fold the corn kernels and finely chopped jalapeno into the batter. Mix just enough to distribute them evenly.

    Tip: If you prefer a milder spice level, remove the seeds from the jalapeno before chopping.
