Ingredients
Instructions
Prepare the Batter
Combine the all-purpose flour, baking powder and salt. Whisk to blend evenly. In another bowl, whisk the milk, egg and melted butter. Gradually pour the wet ingredients into the dry mixture, stirring until a smooth batter forms.
Tip: Avoid overmixing the batter to keep the pancakes light and fluffy.
Incorporate the Corn and Jalapeno
Gently fold the corn kernels and finely chopped jalapeno into the batter. Mix just enough to distribute them evenly.
Tip: If you prefer a milder spice level, remove the seeds from the jalapeno before chopping.
Preheat the Skillet
Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with a small amount of butter or oil.
Tip: Use a brush or paper towel to spread the butter evenly and prevent sticking.
Cook the Pancakes
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface and the edges start to set. Flip the pancakes and cook for 2 minutes until golden brown on both sides. Repeat with the remaining batter.
Tip: Keep the pancakes warm by placing them on a baking sheet in a 90°C (200°F) oven while you cook the rest.
Serve with Toppings
Arrange the pancakes on a plate and top with sour cream or salsa, as desired. Serve immediately.
Tip: Garnish with fresh herbs, like cilantro, for added flavor and a vibrant presentation.
