Prepare the Batter Base
In a large mixing bowl, whisk the flour, baking powder and salt until well combined. In a separate bowl, whisk the milk, egg and melted butter until smooth. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Tip: Avoid overmixing to ensure the pancakes remain light and fluff
Incorporate Cheddar and Bacon
Fold the grated cheddar cheese and crumbled bacon into the batter, ensuring even distribution.
Tip: Reserve a small portion of bacon and cheese to sprinkle on top of the pancakes while cooking for extra flavor.
Preheat the Pan
Heat a non-stick frying pan or griddle over medium heat. Lightly grease it with butter or cooking spray.
Tip: A properly heated pan ensures the pancakes cook evenly and don’t stick.
Cook the Pancakes
Spoon about ¼ cup of batter onto the pan for each pancake. Cook for 2-3 minutes or until bubbles appear on the surface and the edges begin to set. Flip the pancakes and cook for 2-3 minutes until golden brown.

Transfer the cooked pancakes to a serving plate. Stack them, (if desired) drizzle with maple syrup and top with extra bacon bits for added crunch.
