Cheddar and bacon pancakes are fluffy savory delights with crispy bacon and melty cheese folded into the batter. Perfect for any hearty meal.

Ingredients

Instructions

  1. Prepare the Batter Base

In a large mixing bowl, whisk the flour, baking powder and salt until well combined. In a separate bowl, whisk the milk, egg and melted butter until smooth. Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined.                                (Similar to the Spinach and Feta Pancakes, Sundried tomato and parmesan pancakes, Chickpea and spinach pancakes recipes)

Tip: Avoid overmixing to ensure the pancakes remain light and fluff
  1. Incorporate Cheddar and Bacon

Fold the grated cheddar cheese and crumbled bacon into the batter, ensuring even distribution.

Tip: Reserve a small portion of bacon and cheese to sprinkle on top of the pancakes while cooking for extra flavor.
  1. Preheat the Pan

Heat a non-stick frying pan or griddle over medium heat. Lightly grease it with butter or cooking spray.

Tip: A properly heated pan ensures the pancakes cook evenly and don’t stick.
  1. Cook the Pancakes

Spoon about ¼ cup of batter onto the pan for each pancake. Cook for 2-3 minutes or until bubbles appear on the surface and the edges begin to set. Flip the pancakes and cook for 2-3 minutes until golden brown.

Tip: Use a spatula with a thin edge for easy flipping without tearing the pancakes.
  1. Serve and Garnish

Transfer the cooked pancakes to a serving plate. Stack them, (if desired) drizzle with maple syrup and top with extra bacon bits for added crunch.

Tip: Keep cooked pancakes warm in a low-temperature oven (around 80°C) while preparing the rest.
