PREPARE THE BBQ SAUCE GLAZE
Combine the BBQ sauce, soy sauce, honey and minced garlic. Stir until smooth and well blended. Adjust sweetness or saltiness by adding (a bit) more honey or soy sauce, depending on your preference. Set the glaze aside for later use.
Tip: Taste the glaze before proceeding and fine-tune the flavors to complement the fish.
PREPARE THE HALIBUT STEAKS
Rinse the halibut steaks under cold running water and pat them completely dry with paper towels. Lay the steaks on a clean cutting board or tray and lightly brush both sides with olive oil. Sprinkle salt and pepper evenly over each steak, ensuring the seasoning sticks to the surface.
Tip: Patting the steaks dry helps the oil and seasoning adhere better, resulting in a crispier exterior when grilled.
PREHEAT AND PREP THE GRILL
Preheat your grill to medium-high heat (about 200°C). Clean the grill grates thoroughly with a brush, then lightly oil them to prevent the fish from sticking.

GRILL THE HALIBUT
