Sauté the Aromatics
Heat 1/2 tablespoon of olive oil in a large skillet over medium heat.
Add diced onion and minced garlic, cooking until fragrant and softened.
Cook the Vegetables
Add sliced zucchini, yellow squash, diced eggplant and diced bell pepper.
Stir occasionally, cooking until vegetables begin to soften, (7–10 minutes).
Simmer with Tomatoes and Seasoning
Add 1/2 can of diced tomatoes and 1/2 teaspoon of dried thyme. Let simmer for 10 minutes, allowing flavors to meld. Season with salt and pepper to taste.

Tip:
For a stronger flavor, add a bay leaf or a pinch of red pepper flakes while simmering.
