Ingredients
  • 1 cup all-purpose flour
  • 2 tbsp sugar (granulated)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp unsalted butter (melted)
  • 1 tsp vanilla extract
  • Optional toppings: maple syrup, fresh berries, powdered sugar
Instructions
  1. Prepare the Dry Ingredients

    Combine 1 cup of all-purpose flour, 2 tablespoons of granulated sugar, 2 teaspoons of baking powder and 1/2 teaspoon of salt. Stir until evenly mixed.

    Tip: Use a whisk to evenly distribute the baking powder and avoid clumps.
  2. Mix the Wet Ingredients

    In a separate bowl, whisk 1 cup of milk, 1 large egg, 2 tablespoons of melted unsalted butter and 1 teaspoon of vanilla extract until smooth.

    Tip: Ensure the butter is slightly cooled to prevent cooking the egg.
  3. Combine Wet and Dry Ingredients

    Gradually pour the wet ingredients into the dry ingredients, stirring gently with a spatula. Mix until just combined; a few lumps are fine.

    Tip: Overmixing can make the pancakes tough, so stop once the batter comes together.
  4. Preheat the Skillet

    Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

    Tip: Test the heat by sprinkling a few drops of water - if they sizzle, the skillet is ready.
  5. Cook the Pancakes

    Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for 1-2 minutes until golden brown.

    Tip: Avoid pressing down on the pancakes with a spatula to keep them fluffy.
  6. Serve and Add Toppings

    Stack the pancakes on a plate and top with (your choice of) maple syrup, fresh berries or powdered sugar. Serve immediately.

    Tip: Warm the syrup before serving for an extra sweet taste.
