Prepare the Lobster Tails
Using kitchen scissors, carefully cut the top shell of each lobster tail lengthwise down the middle. Gently pull the shell apart and lift the meat, keeping it attached at the base. Put (the meat) on top of the shell for presentation.
Make the Stuffing
Mix the breadcrumbs, grated parmesan cheese, minced garlic, melted butter and chopped parsley. Season the mixture with salt and pepper, to taste. The stuffing should be moist and slightly crumbly.
Stuff the Lobster Tails
Evenly distribute the stuffing mixture over the top of each lobster tail, pressing it down gently to adhere. Ensure the stuffing is compact and covers the meat.
Bake the Lobster Tails
Preheat the oven to 200°C (392°F). Place the stuffed lobster tails on a baking sheet lined with parchment paper. Bake for 15–20 minutes or until the lobster meat is opaque and the stuffing is golden brown and crispy.
Serve the Lobster Tails
