Spiced lentil and sweet potato stew is a nutrient-rich dish featuring red lentils, sweet potatoes and aromatic spices. Simmered to perfection in 30 minutes.

Heat olive oil in a large pot over medium heat.

Add onion and sauté for 3-4 minutes until translucent.

Stir in garlic, ginger, cumin, coriander, turmeric, smoked paprika and cayenne. Cook for 1 minute until fragrant.

ADD LENTILS AND SWEET POTATOES

Pour in rinsed lentils, sweet potatoes, vegetable broth, and coconut milk.

Stir in tomato paste and bring to a boil.

Reduce the heat to low, cover, and simmer for 20-25 minutes until lentils and sweet potatoes are tender.

Stir in lemon juice, salt, and pepper.

Garnish with fresh cilantro before serving.
