Lay the tortillas on a flat surface. Evenly distribute 1/4 cup of shredded chicken and 1/4 cup of shredded cheese over one half of each tortilla.
Add 1/4 cup of salsa on top of the fillings.
Fold each tortilla in half to cover the fillings.
Heat a skillet over medium heat, put a quesadilla in the skillet and cook for 2–3 minutes per side until the cheese is melted and the tortilla is golden brown.
Slice each quesadilla into wedges and serve with sour cream on the side for dipping.
Tip:
Use a spatula to press down lightly on the quesadilla while cooking for even browning and melting.
