  1. Mix the Dry Ingredients

    Whisk the flour, brown sugar, baking powder, salt, cinnamon, ginger, nutmeg and cloves. Ensure the spices are evenly distributed.

    Tip: Sifting the flour can help create a smoother batter.
  1. Combine the Wet Ingredients

    In a separate bowl, mix the milk, pumpkin puree, egg and melted butter until well blended.

    Tip: Use room-temperature milk and egg for a smoother mixture.
  1. Prepare the Batter

    Gradually add the wet ingredients to the dry ingredients, stirring until combined. Avoid overmixing to keep the pancakes light and fluffy.

    Tip: A few lumps in the batter are okay and will cook out.
  1. Preheat the Skillet

    Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

    Tip: Test the heat by sprinkling a few drops of water on the skillet - if they sizzle, it’s ready.
  1. Cook the Pancakes

    Pour ¼ cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface and the edges are set. Flip the pancake and cook for 1-2 minutes until golden brown. Repeat with the remaining batter.
