COOK THE RICE NOODLES

Once the noodles are tender, drain them in a colander and rinse under cold running water to stop cooking. Let them sit for a few minutes to drain completely.

PREPARE THE PEANUT SAUCE
Combine the peanut butter, soy sauce, honey and grated ginger. Whisk the ingredients until smooth and creamy. If the sauce is too thick, add a tablespoon of warm water at a time and whisk until the desired consistency is reached. The sauce should be thick enough to coat the noodles but still pourable.
Tip: Taste the sauce and adjust the flavor as needed—add more soy sauce for saltiness, honey for sweetness or ginger for extra zest.
TOSS THE NOODLES IN THE SAUCE
Place the cooked and drained noodles in a large mixing bowl. Pour the prepared peanut sauce over the noodles. Using tongs or two forks, gently toss the noodles until they are evenly coated with the sauce. Ensure every strand is covered for a consistent flavor in each bite.
