Prepare the Batter
Whisk 1 cup of all-purpose flour, 1 teaspoon of baking powder and 1/2 teaspoon of salt. In another bowl, combine 1 cup of milk, 1 large egg and 2 tablespoons of melted unsalted butter. Gradually pour the wet ingredients into the dry ingredients, stirring until the batter is smooth and lump-free. (Similar to the Spinach and Feta Pancakes recipe)
Tip: Avoid overmixing to keep the pancakes light and airy
Add the Mushrooms and Thyme
Gently fold 1 cup of chopped mushrooms and 1 tablespoon of fresh thyme leaves into the batter. Ensure the mushrooms and thyme are evenly distributed.
Tip: Use fresh mushrooms for the best texture and flavor; sauté them briefly before adding if desired.
Heat the Pan
Place a non-stick frying pan over medium heat and grease lightly with butter or oil. Allow the pan to heat up for 1-2 minutes. (Similar to Savory Pancake I)
Tip: A properly heated pan ensures the pancakes cook evenly and don’t stick.
Cook the Pancakes
Scoop about 1/4 cup of batter onto the pan for each pancake, spreading slightly with the back of the spoon to form an even circle. Cook for 2-3 minutes or until bubbles form on the surface and the edges look set. Flip the pancakes carefully and cook for 2-3 minutes until golden brown.
Tip: Adjust the heat as needed to avoid burning while ensuring the pancakes cook.
Serve
Transfer the cooked pancakes to a serving plate and add optional toppings like a dollop of sour cream or sautéed mushrooms. Serve immediately while warm.
