    Whisk 1 cup of all-purpose flour, 1 teaspoon of baking powder and 1/2 teaspoon of salt. In another bowl, combine 1 cup of milk, 1 large egg and 2 tablespoons of melted unsalted butter. Gradually pour the wet ingredients into the dry ingredients, stirring until the batter is smooth and lump-free. (Similar to the Spinach and Feta Pancakes recipe)

    Tip: Avoid overmixing to keep the pancakes light and airy
  1. Add the Mushrooms and Thyme

    Gently fold 1 cup of chopped mushrooms and 1 tablespoon of fresh thyme leaves into the batter. Ensure the mushrooms and thyme are evenly distributed.

    Tip: Use fresh mushrooms for the best texture and flavor; sauté them briefly before adding if desired.
  1. Heat the Pan

    Place a non-stick frying pan over medium heat and grease lightly with butter or oil. Allow the pan to heat up for 1-2 minutes. (Similar to Savory Pancake I)
