Ingredients
  • 1 can chickpeas (drained and rinsed)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cucumber (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 tbsp fresh parsley (chopped)
  • 2 tbsp oil (olive)
  • 1 tbsp lemon juice
  • to taste salt and pepper
  • Feta cheese (optional, for topping)
Instructions
  1. Prepare the Ingredients

    Drain and rinse 1 can of chickpeas.

    Dice 1/2 cucumber, 1/4 cup of red onion and halved 1 cup of cherry tomatoes.

    Chop 2 tablespoons of fresh parsley.

  2. Combine Salad

    Combine chickpeas, tomatoes, cucumber, red onion and parsley.

  3. Dress the Salad

    Drizzle 2 tablespoons of olive oil and 1 tablespoon of lemon juice over the salad.

    Season with salt and pepper to taste.

    Toss everything, until evenly coated.

    Tip: For extra flavor, top with crumbled feta cheese if desired.
