Description

Herb pancakes with garlic butter are savory, aromatic treats made with fresh herbs and topped with rich garlic butter for a flavorful experience.

Ingredients
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 large egg
  • 2 tbsp unsalted butter (melted)
  • 1 tbsp chopped fresh herbs (such as parsley, chives and thyme)
  • 1 clove of garlic (minced)
  • Optional toppings: additional garlic butter, chopped herbs
Instructions
  1. Prepare the Dry Ingredients

Combine the flour, baking powder and salt. Stir until the dry ingredients are evenly mixed.

Tip: Sift the flour before mixing to avoid lumps and ensure a smooth batter.
  2. Mix the Wet Ingredients

In another bowl, whisk the milk, egg and melted butter until the mixture is smooth.

Tip: Use room-temperature milk and egg for a more cohesive batter.
  3. Combine the Batter

Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Fold in the chopped fresh herbs and minced garlic.

Tip: Avoid overmixing to prevent tough pancakes; the batter should still have a few small lumps.
  4. Preheat the Pan

Heat a non-stick frying pan over medium heat and lightly grease it with butter or cooking spray.

Tip: Ensure the pan is evenly heated to avoid uneven cooking.
  5. Cook the Pancakes

Pour about ¼ cup of batter onto the pan for each pancake. Cook for 2-3 minutes until bubbles form on the surface and the edges start to set. Flip and cook for 2-3 minutes until golden brown.

(Similar to the Cheddar and bacon pancakes recipe)

Tip: Keep the pan greased between batches to prevent sticking.
  6. Make the Garlic Butter

In a small pan over low heat, melt 2 tablespoons of butter. Add a pinch of chopped herbs and a small amount of minced garlic, cooking just until fragrant.

Tip: Do not overcook the garlic to avoid bitterness.
  7. Serve and Garnish

Place the cooked pancakes on a plate and brush or drizzle them with the prepared garlic butter. Garnish with additional fresh herbs if desired.

Tip: Serve immediately to enjoy the best flavor and texture.
