Start by cutting the beef stew meat into bite-sized cubes if not already done. Dice the potatoes, slice the carrots, chop the celery and dice the onion. Mince the garlic cloves.
Heat a tablespoon of oil in a large pot over medium-high heat. Season the beef cubes with salt and pepper. Sear the beef in batches until browned on all sides. Remove and set it aside.
Add the diced onion (in the same pot), sliced carrots and chopped celery. Sauté for 5–7 minutes until the vegetables begin to soften. Add the minced garlic and cook for a minute.
Return the seared beef to the pot. Add the beef broth, diced potatoes, thyme and bay leaf. Stir to combine.
Bring the stew to a gentle boil, then reduce the heat to low. Cover and simmer for about 1 hour, stirring occasionally, until the beef is tender and the vegetables are cooked.
Taste the stew and adjust the seasoning with additional salt and pepper (if necessary). Remove the bay leaf before serving.
