Ingredients
  • 4 acorn squash (halved and seeded)
  • 2 tbsp oil (olive)
  • 1 cup quinoa (cooked)
  • 1/2 cup cranberries (dried)
  • 1/2 cup walnuts (chopped)
  • 1/4 cup maple (syrup)
  • (to taste) salt and peper
Instructions
  1. Roast the Acorn Squash

    Brush acorn squash halves with olive oil and season with salt and pepper. Place them cut side down on a lined baking sheet and roast in a preheated oven at 375°F (190°C) for 30 minutes.

    Tip: Roasting cut side down allows the edges to caramelize nicely.
  2. Prepare the Stuffing

    Combine cooked quinoa, dried cranberries, chopped walnuts and maple syrup.

    Tip: Add more maple syrup for extra sweetness, if desired.
  3. Stuff the Squash

    Remove the roasted squash from the oven, turn the halves cut side up and stuff them with the quinoa mixture.
