Prepare the Batter
Whisk the all-purpose flour, granulated sugar, baking powder and salt. In a separate bowl, combine the milk, egg, melted butter and vanilla extract, add the wet mixture to the dry ingredients. Stir gently until just combined. Fold in the lemon zest and blueberries, being careful not to overmix.

Tip: Overmixing can make the pancakes dense. Stop mixing as soon as the ingredients are incorporated.

Heat the Skillet
Place a non-stick skillet or griddle over medium heat and allow it to warm up for 2-3 minutes. Lightly grease the surface with a small amount of butter or cooking spray.
Tip: Test the skillet’s heat by sprinkling a few drops of water - if they sizzle and evaporate quickly, it's ready.

Cook the Pancakes
Spoon about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, 2-3 minutes. Flip the pancake carefully and cook for 1-2 minutes until golden brown. Repeat with the remaining batter.
Tip: Use a thin spatula to flip the pancakes smoothly without breaking them.

Serve and Garnish
Stack the pancakes on a plate and top with optional lemon zest, fresh blueberries and a drizzle of maple syrup. Serve immediately for the best texture and flavor.
Tip: Keep pancakes warm by placing them in an oven preheated to 80°C while cooking the rest.
